One Bowl Chocolate Chip Banana Bread

We got back from NYC this weekend and headed over to my parents’ house for a little grilling! We had a huge feast of grilled bratwurst, steak, salmon and onions. My sister made a fresh caprese salad with sweet basil and purple basil! IMG_2578 IMG_2584 We finished dinner with some grilled peaches with cinnamon, greek yogurt and honey. I procrastinated on grocery shopping the next day and was scrounging around for breakfast foods Monday so I decided to do a little baking. I was craving some banana bread and decided to throw some chocolate chips in it! I have been using this banana bread recipe for years and adapted it from Simply Recipes. I even cut down on the sugar a little. It’s so healthy! What I love about this recipe is you really only need a fork/spatula and a mixing bowl. No mixer is required! Here’s how you make it:

I have to be honest–I put the yellow/green bananas in the ingredients pic but the bananas below are the ones I actually used….I freeze bananas when they become overripe (freezing in sandwich bags is easiest). Then, you always have bananas ready for banana bread! You want to try to avoid using green bananas for banana bread but I have heard you can ripen them quickly in the oven if you’re in a bind.

Mash 3 ripe bananas in a mixing bowl using a fork. IMG_2587 Melt 3/4 cup butter in the microwave for about 30 seconds and add to the banana mixture. IMG_2588 Add 1 teaspoon baking soda, a pinch of salt and 1/4 teaspoon ground cinnamon. IMG_2590

Once blended, add in 3/4 cup sugar and an egg. Not the prettiest I know!IMG_2591

 

Slowly add in 1 1/2 cups flour a little at a time. IMG_2595

Add in 1/3 cup mini chocolate chips to the batter. IMG_2598

Grease a loaf pan with nonstick spray and pour in the banana bread batter.IMG_2596 IMG_2599 Bake at 350 for about 55 minutes until a toothpick inserted in the center comes out clean. Let cool completely before slicing. IMG_2602 Enjoy it for breakfast or a sweet snack! It’s super moist and has the perfect amount of chocolatey goodness. Recipe adapted from Simply Recipes.

 

*If you want to make muffins instead bake for 20 minutes.

Yield: 1 loaf

One Bowl Chocolate Chip Banana Bread

Ingredients

  • 3 very ripe bananas
  • 1/3 cup melted butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • 1/3 cup mini chocolate chips (or more if you wish)

Instructions

  1. Preheat the oven to 350°F and grease a 4x8-inch loaf pan. I usually use nonstick spray.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda, salt, and cinnamon.
  5. Next, stir in the sugar, egg, and vanilla extract.
  6. Mix in the flour 1/2 cup at a time.
  7. Add in 1/3 cup mini chocolate chips (or more!) to the batter.
  8. Pour the batter into your greased loaf pan.
  9. Bake for about 50 min to 1 hour. Test the bread using a toothpick inserted into the center--if it comes out clean it's ready to be taken out.
  10. Remove from oven and cool completely before serving. Be sure to use a serrated knife to cut clean slices.
