We love to get Chinese takeout for dinner and Ted always orders the fried rice so I thought I’d try out something more economical and healthier! Enter pork fried rice! It has less sodium and grease and you still get to enjoy it in the comfort of your home. I even used brown rice! It’s practically a carb free dish 🙂

This fried rice is super simple and you can really throw various leftovers from your fridge into it–chicken, vegetables, and eggs!

For this recipe I used: eggs, frozen vegetables, pork chops, frozen rice, soy sauce, garlic, olive oil, and sesame oil.

I had bought some boneless pork chops and decided to cut them into thin strips and make them the star of the dish. To make the prep time go quickly I cheated and used frozen brown rice from Trader Joe’s but if you have leftover rice in the refrigerator it will work even better! When the rice is cold and drier it soaks up more of the sauce and gets even crispier!

After cutting the pork into small pieces (on after thought I probably could have cut them smaller but I was feeling lazy) I sprinkled salt and pepper on them and sautéed them in a medium size pan with a tablespoon of olive oil. I only used one pan for the entire meal so if you use a larger pan to start off with you will have plenty of room when you add the other ingredients. When the pork was almost cooked through I added about 1 teaspoon some minced garlic to the pan and cooked for another minute.

I microwaved two packages of frozen brown rice (10 ounces each) and let them cool in the fridge while I cooked the pork.

Next, I added in one cup of frozen vegetables (carrots, corn, peas, green beans and carrots) and a 1/2 cup of frozen edamame and the cooked rice. After cooking it for a few minutes, the vegetables will thaw and you can add in the eggs.

I pushed the rice to the sides and made a small space. I cracked two eggs in and used a fork to quickly scramble them After the eggs are cooked you can distribute the egg pieces throughout the rice.

Finally, I added in 3 tablespoons of soy sauce (you can add in less or more depending on how salty you want it) and 2 teaspoons of sesame oil to the rice mixture and it’s done! Easy, right?? You can adjust the seasoning as needed. No need to call for Chinese takeout now!
